Out to lunch
I've guess I've been "out to lunch" on blogging lately and I went out to lunch today. Jack took me to a yummy Chinese buffet and Drew joined us. It was a delicious lunch, which I really enjoyed because I haven't been to this restaurant in a couple of years. They had changed the layout of the buffet a bit, but the food was better than ever. They even had brown rice. That made me happy because, after many years of not being willing to even try brown rice, I now love it. I always thought it was a health food and must taste awful. Other than some of the conversation being a little inappropriate for a public place, I enjoyed having lunch with my two oldest babies!

Brown rice is good. I keep some cooked at all times, as I serve all my soups, beans, peas over brown rice.
My brother-in-law told me an easy way to cook it: Put 5 cups of cold water and 2 cups brown rice in your pressure cooker,stir, close and seal the lid, turn stove on HI and just as soon as the weight starts to jiggle, take pot off the heat and let it set until cool. Perfect. So much easier than having to stir and simmer for an hour or so.

Thanks for the tip, Laura! I don't have a pressure cooker, maybe I will try to find one at a garage sale. That does sound like an easy way to do it. My cooktop is broken so I only have a small electric portable burner and it is impossible to keep things simmering. I have an awful time making the brown rice on it, so I usually just make instant in the microwave.
